The Chef:

Sebastian Merry is a West Country Michelin trained chef with over 15 years experience in high-end fine dining restaurants, members clubs and hotels. Seb spent his career working between London, the Caribbean & Europe, before moving to Bristol in November 2019 to open his own establishment.

Seb’s ethos is to focus on the ethicality and sustainability of the food served and to break the stigma of fine dining food. Most people regard fine dining food as “posh, expensive and only available to certain social classes.” Seb believes good food doesn’t always have to be ‘posh’ or for those with deeper pockets, but should be accessible by anyone and everyone. Seb’s Buskers’ Banquet menu will be made up of sharing plates and a dessert using ethical, seasonal and locally sourced produce.

The Music:

Buskers’ Banquet offers a unique performance for each venue, celebrating some of Bristol’s talented musicians.
